What you need?

4 slices of cow’s milk semi hard cheese
2 slices of toasted whole-wheat or whole-grain bread
lettuce leaves
2 slices of tomato
1 boiled egg, sliced into 4 pieces
Salt
Fresh grounded black pepper
Extra-virgin olive oil

How to?

1. Grill or fry cheese in a pan for about 1 minute on each side so they turn browned.

2. Spread lettuce, tomato, egg, and cheese on bread. Season with salt and pepper and drizzle some olive oil.

2. Sweet potato and egg hash

What you need?

1/2 tablespoon of coconut oil
1 large diced sweet potato
1 diced red bell pepper
1/2 teaspoon of salt
1/2 teaspoon of pepper
2 chopped spring onions
1 diced clove of garlic
2 eggs

How to?

1. Pour coconut oil in a saucepan, add sweet potatoes and cook 2 to 3 minutes over medium-high heat. Cover the pan for 3 minutes.

2. Add spring onions and garlic. Toss to evenly combine. Crack eggs over mixture, cover the pan, and cook for 3 to 4 minutes!

What you need?

1 pound pork sausage
9 boiled eggs
3 cups cherry tomatoes cut into halves
1/4 cup of chopped red onion
2 diced avocados
1/2 cup chopped Coriander
1/2-1 teaspoon salt
2 juiced lemons

How to?

1. Roll sausage into 1 1/2-inch meatballs and cook until they are brown and cooked. Set aside to cool.

2. Cut boiled eggs into 8 pieces. Put in a large mixing bowl with tomatoes, onion, avocado, meatballs, coriander, salt, and lemon juice. Stir to turn egg yolks and avocado creamy.

What you need?

2 thick tomato slices
1 small handful arugula
1 thick slice hearty bread, cut in half
1 tbs vinegar
2 eggs
Salt
Pepper

How to?

1. Preheat oven to 450 degrees.

2. Bake tomatoes on a baking sheet for 10 minutes, they are soft and deep in color.

3. Place arugula on both bread slices.

4. Bring a small pan of water to a boil and simmer to add vinegar and add crack 1 egg into the water. Let them cook for 1 minute. Remove with a ;arge spoon. Do the same with the other eggs.

5. Put each egg on top of arugula, do not to crack the yolk.

6. Top with tomato and add salt and pepper to taste.

5. Basil Egg Salad

What you need?

8 eggs
12 leaves fresh basil
1/2 cup Greek yogurt
1/2 red onion
2 tbps mustard condiments
1/2 tps kosher salt
Fresh ground pepper to taste

How to?

1. Chop boiled egss.

2. Chiffonade the 12 leaves of basil. Finely mince 1/2 red onion.

3. In a bowl, mix  the eggs, basil, and red onion with 1/2 cup Greek yogurt, 2 tablespoons  mustard condiment, 1/2 teaspoon kosher salt, and fresh ground pepper. Tadaa!

6. Eggy Breakfast Pizza

What you need?

For the Crust:

1 1/2 cups of all-purpose flour
1 teaspoon salt
1 teaspoon active dry yeast
1/2 cup warm water
1 tablespoon olive oil

For the Toppings

1 tablespoon olive oil
1 garlic, thinly sliced
1 tablespoon chopped rosemary
1 cup grated mozzarella
1/2 teaspoon crushed red pepper flakes
caramelized onions
sauteed peppers
2 eggs
fresh arugula

*Makes one pizza!

How to?

1. Whisk together flour, salt, and yeast. Make a well in the center and add olive oil and warm water. Kneed and make a dough ball.

2. In the same bowl add olive oil, spread it around the bowl, sprinkle some floor, put the dough in the bowl, cover with plastic wrap and put aside for the dough to rise.

3. Sprinkle flour on the counter, roll the dough with a rolling pin to 1/4-inch of thickness.

4. Preheat oven to 450 degrees F.

5. Take a cookie sheet upside down and sprinkle flour. Place the dough on the sheet.

6. Sprinkle olive oil, garlic slices, chopped rosemary, and cheese. Top with your favourite toppings.  Crack two eggs onto the unbaked pizza and place in the oven. Bake for 10 minutes. Crust should be golden brown and crisp and eggs are cooked.

7. Let the pizza cool for a few minutes then slice and serve.

7. Curried Egg Salad Sandwich

What you need?

1/3 cup mayonnaise
1 teaspoon curry powder
1 tablespoon chopped fresh chives (green garlic)
kosher salt
black pepper
4 slices pumpernickel bread
4 large leaves Bibb lettuce potato chips

8 boiled eggs

How to?

1. Chop boiled eggs.

2. In a medium bowl, mix mayonnaise and curry powder.

3. Fold in the eggs and green garlic; season with ½ teaspoon salt and ¼ teaspoon pepper. Put lettuce on each bread, add the egg salad. Serve with the chips.

8. Swiss Chard and Cheddar Quiche

What you need?

3 tablespoons olive oil
1 bunch Swiss chard
chopped 1 onion
chopped 3 large eggs
3/4 cup half-and-half
kosher salt and black pepper
2 ounces Cheddar
grated (1⁄2 cup)
1 prebaked 9-inch piecrust
4 cups baby lettuce
1 tablespoon red wine vinegar

How to?

1. Heat oven to 350° F.

2. Heat 1 tablespoon oil in a large pan. Add the chard and onion and cook until tender.

3. Beat the eggs with the half-and-half; season with 1 teaspoon salt and ¼ teaspoon pepper. Add the Cheddar and chard mixture and mix. Pour into the prebaked 9-inch piecrust and bake until set, 40 to 45 minutes.

4. In a medium bowl, toss lettuce with the vinegar, 2 tablespoons of oil, ½ teaspoon salt, and ¼ teaspoon pepper.

5. Eat the quiche with salad.
