1. Cheesy Gratin of Potatoes with Garlic Cream
What you need?
- 3-4 Potatoes
- 1/2 tsp salt
- Pepper to taste
- Pinch of nutmeg (Jaayful)
- 1 clove garlic
- 2 sprigs thyme (Ajwaeen)
- 1 sprig rosemary
- 20 ml cream
- 10 gm Gruyere cheese
- 15 gm cheddar cheese
- 10 gm Parmesan cheese
- 10 gm butter
How to cook?
Peel the potatoes and cut them into thin slices. Put them in utensil bowl covered with water. Cook the cream until it is reduced along with the garlic, a pinch of rosemary and thyme (Ajwaeen) to about half. Grate all the cheeses & keep aside. Take the water out of the potato dish and mix while adding salt, pepper and nutmeg (Jaayful). In a greased baking dish, layer the potatoes neatly. Sprinkle the cheeses and some reduced cream. Top with another layer of potatoes followed by the cheeses and cream until the entire dish is covered. Sprinkle melted butter and bake for 25 minutes at 180°C or until the potatoes are cooked and the surface looks golden brown. Garnish with your favourite veggies! Here you go, potato lover!
2. Dum Aloo Lakhnavi
What you need?
- 1/2 kg potatoes
- 100 gm mashed potatoes
- 100 gm crumbled paneer
- 1 tsp red chilli powder
- salt to taste
- 1 tsp garam masala
- 1 1/2 tsp kasoori methi
- 3 Tbsp ghee
- 1 Tbsp butter
- 1 Tbsp cream
- For the Onion Gravy:
- 200 gm onions
- 1/2 tsp garam masala
- Salt to taste
- 1 tsp ghee
- For the Tomato Gravy:
- 200 gm fresh tomato puree
- Salt to taste
- 1 tsp ghee
How to cook?
To make Onion Gravy: Heat some ghee in a pan and saute all the ingredients stated above. The onions should be turn glossy.
To make Tomato Gravy: In a separate pan, heat some ghee & season all the ingredients (stated above) for a couple of minutes.
Cut out the skin and core of potatoes and deep fry them. While the potatoes cool down make the filling by mixing the mashed potatoes and paneer together. Stuff the fried potatoes with the filling. Cook onion and tomato gravies in oil until the oil separates. Add the garama masala, chilli powder and kasoori methi. Mix. Cook for 1 minute. Add butter and cream and, mix well. Now, add the potatoes and simmer for 3-5 minutes.
3. Greek Chicken Potatoes
What you need?
- 2 boneless chicken breasts, cut in 3/4 inch cubes
- 2 cups cubed potatoes
- 3 cloves garlic, minced
- 1 chicken bouillon cube, dissolved in 3/8 cup water
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon dried oregano
- salt and pepper
How to cook?
Preheat oven to 400°F. Put chicken, potatoes, & garlic in a 9 X 13 inch glass baking dish. Add salt and pepper and mix to distribute well in the dish. Pour the chicken bouillon over the dish. Mix olive oil, lemon juice and crumbled oregano together. Pour evenly over chicken and potatoes. Bake approximately 30-35 minutes so that the chicken is cooked throughly and potatoes are tender golden brown.
- 250 gm baby potatoes
- Salt
- 1/4 tsp sugar
- 1/2 tsp red chilli flakes
- 1/2 tsp turmeric powder
- 1 Tbsp sooji
- 1 1/2 Tbsp ghee
- 2-3 green chillies, finely chopped
- 1 1/2 Tbsp garlic, finely chopped
- 6 medium-sized baked potatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 lb bacon, cooked and drained
- 3 cups sour cream
- 2 cups shredded mozzarella cheese
- 2 cups shredded cheddar cheese
- 2 green onions, chopped
Top with half the sour cream and cheeses. Repeat layers. Bake, uncovered at 350* for 25 minutes. Sprinkle with onions.
- 10 slices bacon, diced
- 1 cup sugar (you could add less too)
- 1 cup distilled white vinegar
- 2 eggs
- 1 tsp salt
- 1 tsp prepared mustard
- 1 dash cayenne pepper
- 10 large boiled potatoes
- 1 medium onion, sliced
7. Shepherd’s Pie
What you need?
- 6 cups diced potatoes with onion
- 6 slices bacon
- 6 eggs
- 1 cup red bell pepper
- 1/4 cup green onion, diced
- 1/4 cup white cheese
- 1 cup shredded cheddar cheese
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon paprika
- 1/4 cup canned chopped jalapeno
- 1 tablespoon onion powder
- 2 cans corned beef hash, if you can’t find it then add 2 cups of cooked meat
- 2 tablespoons olive oil
- 1 garlic clove
How to cook?
Cook 6 slices of bacon until crisp, drain on paper towel. Pour little olive oil into a pan, and cook small diced green onions and glove of chopped garlic. Now mix 6 eggs in a bowl, add salt and pepper to taste. Crumble in white cheese & 6 slices of bacon. Add cooked green onion and garlic to the egg mixture & mix. Pour it into 8×8 casserole dish. Pre-heat oven to 350 degrees and put egg mixture in for 20-25 minutes. Heat up olive oil in pan to cook diced potatoes. Add chopped red pepper & jalapenos. And then, salt and pepper to taste. Add paprika and onions or onion powder. Mix, until potatoes are cooked. Cook 2 cans of beef hash in another pan. Once egg mixture is done, take out of the oven and spread the cooked hash on top of eggs. Now pour potato mixture on top of hash. Cover the top with shredded cheddar cheese. Put back in the oven for 5-10 minutes.
8. Scalloped Potatoes
What you need?
- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese, to sprinkle on top
- paprika
How to cook?
Melt butter in a small sauce pan and blend in flour. Let it sit for a minute. Mix cold milk, stirring with a whisk. Add salt and cayenne and mix. Cook this sauce on low heat until it becomes smooth and boiling while stirring. Reduce heat and add the cheese. Place a half of the sliced potatoes in a lightly greased one quart casserole dish. Pour half of cheese sauce over potatoes. Repeat with second layer of potatoes and cheese sauce. Sprinkle the remaining cheese on top. Top with some paprika for color. Bake uncovered for 1 hour at 350°F.
9. Over-roasted Greek Potatoes
What you need?
- 8 large potatoes, cut into large wedges
- 4 garlic cloves, minced (The more the garlic, the better the recipe)
- 1/2 cup olive oil
- 1 cup water
- 1 tablespoon dried oregano (preferably, Mediterranean)
- 1 lemon, juiced
- sea salt
How to cook?
Preheat oven to 420°F. Put all the ingredients into a baking pan large enough to hold them. Add generous amount of sea salt and black pepper. Toss the pan to distribute evenly. Bake for 40 minutes. When a golden-brown crust appear, stir the dish to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano. Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
10. Bok Choy, Potato and Onion Side Dish
What you need?
- 1 red onion
- 2 tsp oil
- 1 tsp balsamic vinegar
- 2 medium potatoes
- 2 tablespoons fresh ginger, finely chopped
- 1 tsp garlic, finely chopped
- 1 head bok choy (Oriental cabbage)
- 1 tsp flaked sea salt
How to cook?
Peel and chop onions. Cut off only the root end off the cabbage, separate the leaves, and wash carefully. Chop potatoes, and prepare ginger and garlic. Fry the onions in the oil, stirring, over high heat until they soften, then add the balsamic vinegar and stir. Add a little more oil (if required) and the chopped potatoes. Lower heat, & keep stirring to prevent sticking. After about 5 minutes add the ginger, garlic and salt. Slice the cabbage from the stem parts to the green leaves, including all the white stems and add them to the pan. Stir, add the salt, and let saute uncovered for a while to prevent liquid forming. Gently fry until the vegetables are cooked.
